Cooperage: 3rd use barrel (1st use whiskey, 2nd brandy), sourced by Hubert Germain-Robin, 53 gallons Distilled: September 4th, 2012 Age: 3 years, 2 months, 16 days (1,172 days) Harvested: November 11, 2015 Bottled: November 13, 2015   Visual: Clear, medium-pale amber with flashes of gold, viscous and brilliant. Aroma: Clean nose, pronounced and developed aromas of rose, smoke, dried apple peel, apricot marmalade, eucalyptus, passion fruit, golden plum, sultana, pastry, black vanilla, browned butter, nutmeg, flint, wet wool, marzipan, coconut flesh, dried ginger, walnut, hay, honey, river rock, sea spray. Palate: Dry, with bright mouth watering acidity, warming but round alcohol, and full body. Pronounced flavors of custard, brioche, dried pineapple, forest floor, black tobacco leaf, cinnamon, marzipan, dried apricot, white pepper, resin, peach preserves, melon, grapefruit peel, and dried cherries. The rum is round and supple with a structure of dense flavors keeping the rum vibrant while displaying aged aroma and character. The finish is long featuring mineral tones, macadamia nut, and custard flavors. Character: Finesse and power show the balance of rich distillate flavors and elegant distilling and gentle, long term barrel aging. The rum has a long and direct length across the palate and the alcohol, while powerful, is well integrated giving a luscious mouthfeel. The rum features deep concentration of complex flavors. It show the developed savory, dried, and marmalade flavors of extended aging. All tannins are well integrated and youthful ‘spirited’ character has been matured into supple weighty character. It is a dry, richly textured, densely flavored, cask strength rum to be enjoyed as a sipping rum or in proper measure to add depth to any cocktail. Especially suited to the rum old fashioned and daiquiri.
